So can you write down the needs and wants?
For example,
1)Arduino based powered by 12V ( Arduino board has a local 5V regulator to power the micro)
2)Bluetooth to PC communications
3)4 or 5 ADC inputs for sensors ( Which sensors would you like to monitor?)
4)Voltage range of inputs
5) # of bits for ADC (standard is 10bit(0-1023) on Atmel 328P)
6) data collection rate to store on SD card.

Personally I would like to log EGT as Wheming mentioned. I use a K type thermocouple with the MCP3422/4 (18bit) with cold junction correction on my home made coffee roaster which runs to approx 500F. So this should be easy to port as I have the code written and proven with years of use.
