I don't have an answer for you, I just feel bad that it's been three years and no one has figured it out.
They don't just pull out the top when you push the latch button in?
If it's anything like my 88 New Yorker, you have to unsip the backside of the seat and reach up and push a button. This will release the headrest.
It's odd because there's no latch button. It's one wide post in the middle that slides in and out, but hits a mechanical stop at the extent of the travel. I don't see any screws or clips that may provide a way to get it out.
Interesting suggestion about the zipper. I'll have to poke around in the back of the seat to see if there's a zipper somewhere. I'd feel like a tard if that's all it is. Still weird that I couldn't find it anywhere in the service manual.

Might sound stupid, but have you tried removing the headrest from the post, instead of the post from the seat? Ive had a car or two work like that. Of course if you dont have a replacement its a stupid idea as the post would blow someones scalp away. Free head scratch with every ride lol
That's actually where mine appears to be broken. The head rest is just flopping around on the top of the post. That's all I'm trying to fix (of course without making things worse in the process). Yeah I don't think the wife would appreciate the free head scratch every time I mash the gas!

In the 89 parts manual, they don't show the headrest seperately, but they do show the guide tube that mounts in the seat back. It appears that there is a clip on the bottom that needs taken off so it can slide out. Looks like the retainer for the tube uses two screws to hold it in, you may be able to get the entire thing out that way...

I know, I know, it links to TD.com, but all the parts manuals are there. Don't try and open it directly, it will give you an error. Right click and "save as" to your computer, then open it... That post has ever year from 82 to 96.... Very useful...
To remove the headrest slide a dull hack saw blade down the flat part of the headrest shaft on the back side facing rear seats. Use like a 'slim Jim' and slide hack saw blade down along side almost entire length of saw blade. Grab headrest and saw blade firmly and pull up steadily all together as one. This will release the small spring latch / catch preventing the headrest from coming out.

I've already dismantled the head rest. I have no idea how on earth this thing ended up broken the way it did. It must have taken quite a hit from the side. Luckily I should be back in business after some creative sheet metal work.
