you don't want it turned on a lathe, you want it too look like it's been disc ground or cut with a flycutter. Exactly how they do it I haven't seen but that's the kind of finish you want on it. If it's turned on a lathe then the clutch will slip prematurely.
I use the technique of taking it to NAPA with $30-35 in hand

Ground is nice but VERY few machine shops have a surface grinder that large. I had some aftermarket 12.5 brake rotors on my Passat that were pulsating, most shops I talked to could only surface grind up to 9". Lathe (like Napa's and others will use) gets it sorta flat, as in halfway good. Flycut is way better than the lathe. I say grind if you can find it, flycut if you can't and Napa (or similar) only if you have to

There are places that would use a lathe on a flywheel? Yet another reason not to move to Cali... I generally go to the brake & clutch shop and have them turn it for $25; it's flycut at least it's not a lathe...

Ghetto technique for getting anything flat....
Get an offcut of granite countertop, or some 1/2" thick float glass, put it on a flat bench, check it's optically flat by the reflection, if it's sagging anywhere, shim it. Spraymount some high quality 80 grit sheets on it. Spray with lube. Mark workpiece for directionality if round. Do about 10 strokes in one direction, clock it 180* do 10, clock it 90* do 10, clock it 180, do 10, then rotate 45* and repeat... if you want a finer surface, go up a couple of grit grades and repeat. Check with an accurate straightedge and feeler gauges from time so you can correct any problems before they get major and/or you know when you're done. Be careful not to catch the leading edge of what you're surfacing and round it.
Bearing in mind that some shops "surface" heads on a belt sander, this will do a pretty good job.

heh, how bout whatever surface you can get for cheap, and then go over it with a 36 grit roloc disc. Its working on the aries...

When I had mine done, the shop had a special machine to grind it, you want them flat. Steve Mercier works there and took care of me, it was about 50$ for the job.
