I personally don't like the 2.5 with the BS's removed, too much vibration/noise.
You can use anerobic sealer to seal the oil pump to the block.
How are you verifying oil pressure? What did the bearings look like you replaced? I've seen it too, worn out BS assembly's will cause low oil pressure.
