The wideband allready has a 5V regulator. Just tap into it.
You can't use just any old wire and connectors for thermocouples.
You need one's designed for this application.

You can't read a wideband with a voltmeter. They need a controller for the heater circuit. That's why their not cheap. Lot's of info here. http://wbo2.com
