Miles, back when my shop was a Holley carburetor service center and warehouse, the Holley rep told me they used Stoddard Solvent as it's flow characteristics were very similar to gasoline but not as flammable. Kerosine might work too. Whatever you do, come up with a safe collection system and a way to get the fumes from the spray safely collected and contained or vented to the outside. I would not use water as the injectors are not real happy with it.
I would also suggest that rather then using a pump, use a suitable reservoir with a regulated compressed air supply so you can vary the pressure if needed. (too damn many years working in a laboratory doing strange tests for engineers)
