this is kind of a "what if" question. I've seen plans for flowbenches on the net. most of these use a manometer or pressure sensor to determine flow via pressure drop.

why not use a MAF meter off of a GM or Ford?
you would get a signal that could be translated into flow, a scanner will usually display MAF voltage and airflow(grams per second from what i've seen)

does this sound doable?

Actually those MAFs put out some pretty wierd signals, and can be affected by all sorts of stuff, need an ECU to translate them. I've been thinking of using a MAP sensor, there's enough info around on "ours" and you just convert the voltage to the pressure reading.
